Helping Ninjas Organic Fresh Guacamole

  • 4 Ripe Organic Avocados
  • A cup of Organic Multi Color Cherry Tomatoes or 6 Roma Tomatoes
  • 1/2   Onion (We use yellow onion, but any onion is fine)
  • 1 – 1 /2  cups of Cilantro leaves
  • 4 Garlic Cloves
  • 1-2 Dash Salt
  • 1  lime (Squeeze juice directly into mix)

Directions: 

Chop and mix all ingredients.  Add avocado last.

**If using a food processor, only pulse the ingredients so that they are chopped and not blended so much they become soup-like.  Add all ingredients (besides avocado) and pulse until diced/chopped. Add avocado and pulse until desired texture. (We like ours chunky!)

Tip from the chef: Non-Organic Avocodoes can sometimes be  farmed with the use of  pesticides and severely effects the taste.  If you can chooose to use all organic ingredients, pay the cost per avocodo! Its worth it- you may be surprised to taste the  differencein the taste and consistency of the quac.

Diced strawberries, finely shredded-cheddar cheese, finally chopped red leaf lettuce, splash of grapeseed oil- toss together)

Fresh tomatoes, basil and mozzarella drizzled in Olive oil, balsamic vinegar and a squeeze of lemon

Fresh smoked salmon and cream cheese atop wafer crackers

Greek Cucumber & Feta 

Fresh crumbled feta cheese atop diced peeled cucumbers. Mix. Drizzle with olive oil & cracked black pepper & sprinkle of rosemary. Served with a Mini baguette or pita chips.

Over Easy Eggs

Who doesn’t like sunny side up eggs? Healthy options using a thin coat of coconut oil in skillet and less butter. 

Coconut Oil prevents sticking and if used sparingly the taste cannot be detected and helps to keep the texture of the egg.

Frozen sausage links easily prepared stovetop in in frying pan, fill with one tablespoon of water and cover. 

Shake pan often, flipping sausages to prevent sticking. 5-6 minutes

Options are many for offering smoothies as they are easy to make in a blender. Could be offered daily or on week to week special basis. This provides an opportunity for the kitchen to put to use fresh fruits & vegs that are near their ripen expiration without incurring any waste expenses.

Organic Snack Cups 

This items can be served as a “side” – in a cup in which portions are smaller than let’s say the average small bag of chips. Think small dressing/ketchup cups.

Instead of offering items such that contain preservatives or artificial dyes consider providing ones naturally derived and  that do not have  or are not high in corn syrup, wheat or sugar.
